BIO 240 - Nutrition


Lecture Hours: 3 Credits: 3

Description: This course is an introduction to the essential aspects concerning the science of nutrition. Particular emphasis is on the classes of nutrients and their physiological uses in the body. Body energy requirements and the nutritional status of the world are considered.

Prerequisite(s): Take MAT 101  or MAT 152  or MAT 103 , and ENG 100 , RDG 100 , and (BIO 100  or CHM 100  or High School Biology or High School Chemistry) with a minimum grade of C.
Course Topics:
  • To understand the basics of human nutrition and the role of macro- and micronutrients in the body.
  • To develop an understanding of the digestive system and how nutrients are absorbed and utilized by the body.
  • To identify the nutritional needs of different age groups and populations, including infants, children, pregnant and lactating women, and elderly individuals.
  • To recognize the relationship between nutrition and chronic diseases, such as heart disease, diabetes, and cancer.
  • To evaluate and interpret food labels and make informed decisions about food choices.
  • To analyze current issues related to nutrition, such as food insecurity, food deserts, and food waste.
  • To understand the principles of healthy eating patterns and dietary guidelines for optimal health.
  • To recognize the cultural, social, and economic factors that impact food choices and nutrition status.
  • To develop critical thinking skills and the ability to apply nutrition knowledge to real-life situations.
  • To gain an appreciation for the diversity of foods and dietary patterns across different cultures and regions of the world.

Grading System:
An overall grade of C or higher is required for transferability.

A = 90 - 100
B = 80 - 89
C = 70 - 79
D = 60 - 69
F =   0 - 59

  1. Identify diet and lifestyle factors important in promoting health and preventing disease.
  2. Identify and explain energy nutrients and the role of energy balance on health.
  3. Define the micronutrients, vitamins and minerals.
  4. Describe the role of water, vitamins and minerals in promoting growth, development and maintenance of the body and in regulating body processes.
  5. Describe the relationship between nutrition and fitness, sports and eating disorders.
  6. Describe nutrition as it relates to specific life stages.
